It’s getting closer to Thanksgiving so I thought you might want to start thinking about your menu, so I’m going to share some side dishes that will go with your turkey and dressing. I usually fix several so everyone will have a choice. Let’s start with a wonderful corn casserole. It’s soon going to be time to start your menu by planning and shopping for the big day. I love planning a big meal for the family. My mother always said, “put the little pot in the big one.” So there was always a beautiful roasted turkey with all the trimmings. and everyone would go away with full stomachs and wonderful happy memories.

Red had every imaginable sort of cast iron pot and pan and loved cooking in them. He actually had more cookware than most women have in their kitchens. He was always a happy man each time he acquired a new piece of cast iron. I was happy too, as it was all too heavy for me to wash. It’s truly amazing how easily all those tiny women of the past could wield them! I believe Red’s most prized piece of cast iron was a huge skillet he had bartered for from my Mama. It had three legs to sit above the coals and also had a very long handle; they called those spiders. He thought that skillet was just wonderful. It was a very old piece, and he got the best end of that deal. Or did he? Mama was very happy with her electric skillet, so I guess it was a win-win. Red had every size of Dutch oven and deep Dutch oven. There were bean pots, coffee pots, kettles, griddles, and old spatter enamelware. One of our prized possessions was the yellow enamel dishes rimmed in brown with various pictures on them, portraying scenes of life in a wagon on the trail. Mama and Al had actually used those dishes in their own covered wagon; they had often gone on trail rides.
