Around the Kitchen Table with Nanny

I hope everyone is enjoying this beautiful cool weather as much as we are. It is so good to be away from all the extreme heat we have had most of the summer. I love the fall of the year, I guess this would be Autumn, I never know for sure when one ends and the other begins, but I love it all. The weather is cooling off enough now. We can have the oven on and start my favorite thing, baking. So, let’s try a couple of good cakes. One that is a very old recipe from the WWll era. It was one of my favorites and one I have not had in a long time. I hope you will try it for a special occasion LADY BALTIMORE CAKE; You will need to start with this WHITE CAKE SUPREME; 3/4 cup shortening 1 1/2 cup sugar 1 1/2 tsp. vanilla 2 1/4 cup sifted cake flour 3 tsp. baking powder 1 tsp. salt 1 cup milk 5 stiffly beaten egg whites. Cream shortening and sugar till light. Add vanilla and mix well. Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, beating after each addition. Gently fold in egg whites. Bake in 2 greased and lightly floured 9-inch round cake pans. at 350 degrees for 18 to 20 minutes or till done. Cool for 10 minutes. Remove from pans and cool thoroughly, fill and frost with the following recipes.

BRTC Holds COVID Vaccine/Booster Clinic

On August 31, BRTC held a COVID vaccine/ booster clinic on the Pocahontas and Paragould campuses. It was open to students, staff, family members, and the public. The clinic was held in 1st Choice Healthcare’s mobile unit. Staff not only gave shots but provided tours of the new unit. Participants received freebies and a $50 VISA card.

Graycen BiggerNamed toAECDE Board

On August 30 at their annual meeting, the Arkansas Economic Developers & Chamber Executives (AEDCE) members named Graycen Bigger, Black River Technical College Foundation board member and executive director of the Northeast Arkansas Regional Intermodal Authority, to the AEDCE board of directors for her second term as first congressional district representative and third term on the board. “Graycen brings a wealth of economic development experience, community passion, and a workforce perspective that not only strengthens the Board but also and helps to shine a light on the many successes of our corner of the state,” said Dr. Martin Eggensperger, Black River Technical College president.

BRTC BATProgram Participates Campaign

On September 2, 2022, BAT Program Coordinator Ashley Boles and BAT Program Instructor Aaron Schenk participated in the National Highway Traffic Safety Administration (Region 7), National Park Service, and Arkansas State Police Highway Safety Office Drive Sober or Get Pulled Over Impaired Driving Enforcement Media Campaign. This event was a High Visibility Enforcement (HVE) media campaign to deter impaired drivers during the Labor Day weekend, September 2-5, 2022.

Maynard Alumni Reunion

The Maynard Alumni and Friends Reunion is planned for Saturday evening, September 17, 2022, at 5:00 pm at the Maynard High School Cafeteria. You do not have to be a graduate or ever attended school at Maynard to attend. Membership to the Maynard Alumni Friends Association is $15.00 and includes a delicious meal prepared by the BETA Club. Meal for a guest is $10.00 per guest.
